Macadamia crusted Barramundi

Warmnights call for easy and breezy dishes, best enjoyed with friends and family.Next time you want to wow your guests, try this dish – its delicious, and bestof all easy to make!


21/2 cups roasted macadamia nuts

11/2 cups fresh breadcrumbs

2eggs, lightly beaten

2teaspoons water

4x 180g barramundi fillets

1/4cup olive oil

lemonwedges, aioli and green salad, to serve.



Processnuts and breadcrumbs in a food processor to fine crumbs. Remove to a shallowdish. Season with salt and pepper.


Lightlybeat eggs and water together in a shallow dish. Dip both sides of fish filletsinto egg mixture. Coat with breadcrumb mixture, pressing on with yourfingertips. Transfer to a plate. Cover with plastic wrap. Refrigerate for 20minutes.


Heatoil in a non-stick frying pan over medium heat. Cook fish for 3 to minutes eachside or until golden.


Servefish with lemon, aioli and salad.
