Grilled Turkey Cutlets

Christmasis coming around the corner, and you know what that means – time to startplanning your Christmas menu!
To give you some inspiration, take a look at this sumptuous Grilled TurkeyCutlets with Olive and Almonds – delish!




·1/2cupwhole almonds with skin,coarsely chopped – grab some here:

·1/2teaspoonsweet smoked Spanish paprika(pimenton)

·2tablespoonsextra-virgin olive oil

·1/2cupolives with pimento, rinsed andcoarsely chopped

·1/2cupchopped roasted red pepper(jarred)

·1 to 1 1/4pound1/4-inch thick turkey cutlets



·Cook almonds in oil withpaprika in an 8-inch skillet, over medium heat, stirring often, until toasted,about 5 minutes, then stir in olives and roasted red pepper and keep warm.

·Pat turkey dry and seasonwith ½ tsp each salt and pepper.

·Heat an oiled ridged grillpan, preferably cast-iron over medium heat until hot, then grill cutlets, inbatches if necessary, turning once, 4 to 5 minutes total. Transfer cutlets to aplatter and spoon almond mixture on top.
